Southwestern Meatloaf

 
 
This puts a spin on meatloaf by adding a hot pepper. For this meatloaf I used the following ingredients:
 
1 pound ground beef
1 pound Italian sausage (a little spicier than regular sausage)
1 small onion (can use less or whatever amount you desire but we like onions)
3 eggs
1 cup cut up parsley (fresh, it makes a difference and its healthier for you!)
1.5 cup katsup
3 cloves of garlic
2 tablespoons of warshashire sauce (I didnt realize until later I forgot to put it in the picture.)
1 hot pepper (to add some kick, or you can add mild or sweet peppers.)
2 cups of breadcrumbs (I made mine homemade.)
salt and pepper to taste
 
 
 Cut the onion, garlic, pepper, and parsley. Saute the onions and cloves of garlic.

Combine ingredients in a bowl and mix well. Shape into the meatloaf and add the glaze generously.
 
Glaze recipe;
1 cup katsup
2 tablespoons of apple cider vinegar
1.5 cup brown sugar
2 tablespoons of honey

I baked my meatloaf on foil with holes in the foil. I placed a pan under the foil to catch any of the fat that drains off the meatloaf. Some may choose to keep this to keep the meatloaf moist but I chose to drain it. However, my meatloaf was plenty moist becasue of the katsup and liquids added to the meatloaf. The fat juice that drained off kept it healthier for my family. Bake on 350 for 60 minutes. This could take more or less time depending on your oven. If you bake you know if your oven runs hotter or cooler than other ovens.


When finished serve with mashed potatoes, bread, and asparagus! Great family meal! ENJOY!

4 INGREDIENT PISTACHIO COOKIES!

Four Ingredient Pistachio Cookies!


These cookies are super simple and yummy too!!

Preheat the oven to 350 degrees.

You will need;

Two 3.4 ounce boxes of Pistachio Jello mix
One and half cups of bisquick (or another generic brand)
Oil (I used peanut oil)
Two eggs

One half to one cups of sliced almonds (optional)



Mix two boxes of Pistachio Jello mix(3.4 oz. boxes) with one and a half cup of Bisquick (You can use a generic brand) and one cup of sliced almonds. I used the Target baking mix.

Seperately mix two eggs and one half cup of oil. I used peanut oil because it is healthier and I think it makes everything taste better(IMO.)

Then combine the liquid and the dry ingredients. Mix. Round cookie batter into balls on the baking stone (or cookie sheet, whichever you prefer.) Slightly flatten the top of the cookies. And bake for 8-10 minutes. Cool and enjoy!

A Great Way to Release Stress







 To Release Stress is to Find Happiness!





About five years ago I battled cancer. My faith was strong and I believe that was the reason for my survival. I am now cancer free but still from time to time deal with the long lasting affects of cancer and their stressors. I have anxiety from nightmares. From day to day I also battle chronic pain which leaves me frazzled! I have found several hobbies which are therapeutic. Crocheting is one hobby I highly recommend.



I taught myself how to crochet a year ago. I learned by watching tutorials on YouTube. There are so many that teach the basic steps of crochet and more advanced techniques as well.
I recently finished an afghan inspired by the traditional sock monkey colors! I am excited to say it only took me a month to finish. I know that is a long time, but I put it down and picked it up several times during that month too. Ive found crocheting to be a very relaxing hobby. It has been my release and I highly recommend it to others who are also looking for a way to relax your mind.
